Built on a thick layer of creamy hummus and loaded with seven different coloured vegetables, each providing a different flavour and texture, this wrap is nutritionally complete, visually stunning, and genuinely delicious. No cooking required.
The key to making this wrap extraordinary rather than merely healthy is using vegetables at their best: crisp, fresh, and cut to the right size and shape so each bite has a variety of textures. The lemon tahini drizzle β a simple combination of tahini, lemon juice, garlic, and water β ties everything together with earthy, nutty depth.
The beauty of this recipe is its flexibility β any seven vegetables work, as long as you aim for variety of colour, texture, and flavour. Our recommended combination: red bell pepper (sweet, crisp), orange carrot (julienned or grated, sweet and crunchy), yellow corn (sweet and tender), green cucumber (cool and refreshing), green spinach or rocket (fresh and slightly peppery), purple cabbage (crunchy and mildly peppery), and white or pale green avocado (creamy and rich). Together they cover every part of the flavour and texture spectrum.
Prepare each vegetable carefully: slice or julienne to consistent sizes so they distribute evenly across the wrap. Oversized vegetable chunks tend to fall out when rolling and create uneven bites. Aim for strips or pieces no longer than 5cm and no thicker than 1cm.
Whisk together two tablespoons of good tahini, the juice of half a lemon, one small grated garlic clove, a pinch of salt, and enough cold water (start with two tablespoons) to create a smooth, pourable sauce. Tahini seizes when you first add liquid β keep whisking firmly and it will smooth out. The finished drizzle should be pale, creamy, and just thin enough to pour. It adds earthy depth that elevates the whole wrap.
Lay a large whole wheat tortilla flat. Spread a generous, thick layer of hummus across the center, leaving a 3cm border. Layer the vegetables across the hummus in rainbow order from one side to the other β this creates a spectacular cross-section when you slice the wrap in half. Drizzle generously with lemon tahini. Add a few fresh herb leaves (parsley, mint, or basil work beautifully) and a pinch of za'atar or smoked paprika for a final flavour note.
Roll firmly, slice diagonally, and serve immediately. These wraps also pack well for lunch β keep the tahini separate and add just before eating to prevent sogginess.
